I love feeling like a Super Chef when I’m cooking on the Big Green Egg for Mr. Squeeze. Being outside instead of the kitchen, immersed in nature, surrounded by flowers and birds…C’mon now… what woman wouldn’t love that! And not to mention, I seem to have this innate ability to make anything taste good when it’s cooked over an open fire!
I like to say… for the Big Green Egg, think of your oven but on steroids (without all those pesky buttons to push). The Big Green Egg is like nature’s perfect smoker, grill and oven all in one.
As for the roasted chicken thighs, a few simple ingredients are all that’s needed for this dish!
My Mr. Squeeze wanted chicken strips in warm tortillas with mango salsa – less than 30 minutes from start until finish!!
The ease of prepping food on the weekends has been a lifesaver for me. I always feel so much better when it’s Monday and we get to eat our backyard nibbles!
Between you and me, I think Mr. Squeeze may not know that his next 3 nights are going to be a lot like tonight! Best Roasted Baked Chicken Thighs Big Green Egg

Ingredients
- 2 jumbo pack boneless chicken thighs
- 2 tbsp garlic powder
- 2 tbsp onion powder
- 2 tsp white pepper
- 2 tbsp Boars Night Out White Lightning with double garlic butter
- 2 tbsp soy sauce (gluten free,low sodium)
Instructions
Big Green Egg Prep
- Prepare your Big Green Egg
- Place Conveggtor into the Big Green Egg
- Place grill on top of Conveggtor
Chicken Prep
- Trim your chicken fat
- Mix all ingredients into a bowl
- Be as generous as you like with your seasoning
- Caress chicken thighs to ensure all seasoning is entirely rubbed on the meat
- Place chicken on grill grate, close the lid of the Big Green Egg
- Wait patiently, meditate
- Chicken cooked at 350 didn't take long at all. Anticipation builds
- Bake away, or should I say roast away.
- Check temperature, give it a good probe. 165 is your temp.
- Serve as you please.
